Mango Paneer Poke Bowl

We’re taking our signature Param Paneer, glazing it in sticky-sweet mango chutney, and pairing it with smoky, oven-crunched chickpeas and a zesty rainbow of fresh veg.

Ingredients
- 200g Param Paneer
- 150g rice
- 2 tbsp mango chutney
- 1 tin chickpeas
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 2 tbsp veg oil
- 100g cucumber
- 100g cherry tomatoes
- 1/2 red onion
- 50g rocket
- 1 lemon
- Black sesame seeds, to finish
Method
Drain and rinse your chickpeas, then toss them with the cumin, coriander, smoked paprika, and a splash of oil. Roast at 180°C for 30 minutes until they’ve reached peak crunch — these are your smoky little flavour bombs.
Get your rice bubbling away according to the pack instructions.
Dice the cucumber and cherry tomatoes, then hit them with a squeeze of lemon and a pinch of seasoning for a fresh, zesty glow-up. Slice your red onion and keep it ready for the crunch.
Cube your Param Paneer and fry in oil until every side is gloriously golden. Stir in the mango chutney and keep it moving until the paneer is coated in a sweet, sticky, irresistible glaze.
Build your bowl: start with a rice base, load up the rocket and zesty veg, then crown it with the mango-glazed paneer and those crunchy chickpeas. Finish with a sprinkle of black sesame seeds for that high-definition look.
