Sizzling Spiced Paneer Flatbreads

It’s fresh, vibrant, and packed with enough protein to keep you fueled and feeling good. Whether it’s a desk-side win or a quick-fire dinner, this is paneer made for the feel-good fusion.

Ingredients
- 200g Param Paneer
- 2 flatbreads
- 2 tbsp curry paste
- 4 tbsp mint raita
- ¼ cucumber
- Large handful red cabbage
- ½ red onion
- 1 small carrot
- 1 red chilli
- Handful pomegranate seends
- Small handful of mint and coriander
Method
Toss your Param Paneer cubes into a bowl with your chosen curry paste. Let them vibe and marinate for at least 30 minutes— the longer the better for that deep flavour infusion.
Slice the red onion and cabbage into thin ribbons, and turn the cucumber and carrot into crunchy matchsticks. Keep your sliced chilli close for that final kick.
Sizzle those paneer cubes in a pan, under the grill, or on the BBQ until they’re gloriously golden and charred on all sides.
Give your flatbreads a quick toast until they’re soft and pillowy, then place them ready for the build. Load those vibrant veggies high onto the bread and crown them with your hot, golden paneer.
Hit it with a swirl of cooling raita, the sliced chilli, a pop of pomegranate seeds, and a shower of fresh mint and coriander.
